How to Keep Your Cafe or Coffee Shop Cool During a Heatwave
Espresso machines and commercial ovens turn your cafe into a sauna during a summer heatwave. Learn how to extract the heat and keep your customers comfortable.

Running an independent cafe or coffee shop during a UK heatwave presents a massive operational challenge. When the sun comes out, footfall surges with customers looking for iced coffees, cold drinks, and a place to relax out of the heat.
But there is a catch: the equipment required to run your business is actively working against you.
Commercial espresso machines, panini presses, display fridges, and dishwashers generate a staggering amount of ambient heat. If you do not have a robust climate control strategy, your cafe will quickly turn into an oven, driving customers back out the door and making your baristas miserable.
Here is how to manage the thermal load in a small hospitality space.
The Equipment Heat Trap
An industrial, two-group espresso machine is essentially a massive, uninsulated boiler sitting right on your front counter. It radiates heat continuously. Combine that with the heat exhausted from the compressors on your under-counter fridges, and the area behind the till easily reaches 35°C on a hot July afternoon.
If you just place a cheap desk fan on the counter, you are simply blowing that boiler-heated air directly into the faces of your queuing customers.
1. Aggressive Extraction Behind the Bar
Your first priority is protecting your staff and extracting the heat at the source.
You need mechanical extraction. If you cannot install permanent overhead HVAC extraction hoods, you must deploy a commercial portable air conditioning unit (minimum 10,000 BTU) specifically for the barista area. You must vent the exhaust hose directly outside, either through a rear door, a high window, or into an existing extraction plenum. This physically removes the equipment heat from the building rather than just pushing it around.
2. Managing the Dining Area
Once the barista station is stabilized, you need to address the customer seating area.
Customers will not sit and eat in a stagnant, humid room. If your dining area lacks central air conditioning, deploy high-velocity oscillating tower fans in the corners of the room.
Placement is critical:
Do not point fans directly at tables, or you will blow napkins and lightweight food off the plates.
Position the fans to push air along the walls and across the ceiling to create a circular "wind-chill" vortex in the room. This keeps the air feeling fresh and encourages the evaporation of sweat, making the room feel cooler than it actually is.
3. Fridge Compressor Management
Check your display and under-counter fridges. If the condenser coils are caked in dust, the motors have to work twice as hard to keep the food cold, which means they are dumping twice as much heat into your cafe. Vacuuming the dust off your fridge intakes can noticeably reduce the ambient heat behind your counter.
